Coconut chocolate mousse

Imagine a dessert that's rich, creamy and loaded with chocolate flavor — but doesn't require tons of cream or sugar. This high-protein coconut chocolate mousse is easy to make and super delicious.

Coconut milk gives this protein mousse that lovely silky feel you expect without a drop of milk, while using maple syrup keeps it free from refined sweeteners.

But the biggest hack in this dessert is the addition of Ancient Nutrition's Whey Protein Chocolate or Bone Broth Protein Chocolate (for a dairy-free version). These protein powders help you hit your protein goals, mix in seamlessly and offer extra benefits.

You've got to try this coconut chocolate mousse.

Key ingredients

  • Coconut milk: It provides healthy fats, including medium-chain triglycerides (MCTs), that help create a rich, satisfying dessert. Coconut milk forms the creamy base of the mousse, giving it a smooth, silky texture.

  • Ancient Nutrition's Whey Protein Chocolate or Bone Broth Protein Chocolate (for a dairy-free version): These protein powders provide high-quality protein to support muscle recovery while adding rich chocolate flavor. The protein powder thickens the mousse, boosts its protein content, and creates a rich, chocolatey taste without the need for additional dry ingredients.

  • Cocoa powder: Rich in antioxidant compounds called flavonoids and provides minerals such as magnesium and iron, it delivers deep chocolate flavor and enhances the mousse's rich color and velvety texture.

  • Maple syrup: It provides natural sweetness along with small amounts of minerals like manganese and zinc. Maple syrup sweetens the mousse while blending seamlessly with the chocolate and coconut flavors.

  • Vanilla extract: It contributes minimal nutrients but contains naturally occurring antioxidant compounds. Vanilla enhances the chocolate flavor and adds warmth and depth to the finished mousse.

How to make coconut chocolate mousse

This high-protein coconut chocolate mousse is simple to make and comes together with just a few minutes of prep before chilling. Start by shaking the cans of coconut milk well, then open them and pour the coconut milk into a mixing bowl. Whisk until the liquid and cream are fully combined and smooth.

Next, add the chocolate protein powder, cocoa powder, maple syrup, vanilla extract and salt. Whisk the mixture with an electric whisk for about 1 minute, or by hand for 2 to 3 minutes, until it begins to thicken slightly. Scrape down the sides of the bowl halfway through to make sure all of the ingredients are evenly incorporated.

Once the mousse mixture is smooth and creamy, divide it evenly among serving dishes or small jars. Place the mousse in the refrigerator for at least 2 hours, or until chilled and thickened.

Before serving, finely chop the chocolate and sprinkle it over the top of each mousse cup. Add fresh berries if desired for a bright, refreshing finish, then serve and enjoy.
